Does my signature get uploaded or stored anywhere?

No. The signature you draw or type stays in your browser's memory and is written directly into the PDF on your device. Nothing is transmitted to us, and closing the tab discards it entirely.

Can I add text as well as a signature?

Can I sign a PDF on my phone?

Can I sign a password-protected PDF?

Encrypted or permission-restricted PDFs cannot be modified in the browser. Remove the protection in the application that created the file first, then sign the unprotected copy.
